Mexican Cube Steak


Don't know what to fix, tired of the same old thing. Well, here is a new creation from my kitchen. It uses cube steak, with a taco twist. Let's go to Mexico for supper tonight, Ole'!

Bev's Mexican Cube Steak

4 pieces of cube steak
1 Tbsp. vegetable cooking oil
1 packet of your favorite taco seasoning.
1 jar of salsa or make it yourself using 1 can of diced petite tomatoes and 1 small can of green chiles

Brown the steaks in the oil on both sides. Sprinkle half of the taco seasoning on the steaks. Place the steaks into a 350 degree oven, covered, for 45 minutes.

Sidenote:(Cooking cube steak of any kind, in the oven after browning, for up to an hour makes it really, really tender. You can also add a can of cream soup to it for gravy - but I wouldn't for this receipe!)


Put the steaks on the plate, using the salsa as topping.
Serve with green beans and potatoes, or mexican rice and corn!
Sure to be a hit!

TO MAKE YOUR OWN QUICK SALSA:
Mix together the canned tomatoes (with juice) and the drained chilles. Stir in 1/2 Tbsp. of the taco seasoning. Stores in the fridge for three days.

Leftover Lunch Bunch

Here's a quick tip for a great lunch. Tried and tested by a toddler

Ingredients:
Leftover meatloaf
Some grated cheese (about 1/2 cup, depending on how much meatloaf you have on hand)
Tortillas

Crumble the meatloaf into a sauce pan and add about 1 TBSP of water. Heat until sizzling. Mix in half of the cheese. Stir together and place in a warmed tortilla. Serve. It is a great way to use up last night's meatloaf and a quick lunch. My three-year old gobbled it up!

Welcome to CIBO!

I love food, I love to cook, I love to try new recipes and create new recipes. Cooking is a passion for me. Because I love it all so much, it is odd to me that others do not. But I have a few close friends who would rather go broke buying take-out than cook a meal. It is for them that I write this blog. Yes, it will be a place to share great recipes and cooking adventures, not to mention tips for getting a toddler to eat and how to get a cake out of pan, but I want my friends to have a place to turn to when it is time to prepare a meal. A safe, happy, fun cooking site that (hopefully) will spark enthusaium in their cooking. I'm no Rachel Ray or Paula Deen, but I have been known to turn out a mean feast on occassion and I deeply enjoy watching others become excited about cooking.

And just in case you are wondering about the name of the blog - CIBO is the Italian word for FOOD. I love all things Italian - so it just seemed to fit.
